This aging process also breaks down allicin and alliin, compounds in fresh garlic responsible for gastric reflux and body odor, and converts them into more stable sulfur-containing compounds, mainly S-allyl-cysteine. This compound helps prevent cholesterol oxidation and the formation of atherosclerotic plaques.
Hydroxytyrosol (Olive Extract)
This potent antioxidant helps reduce LDL cholesterol and further prevents plaque formation in the arteries.
