Saccharomyces boulardii occupies a place of its own in the world of food-grade micro-organisms: it is a yeast — a single-celled fungus — whereas most ferments used in food supplements are lactic acid bacteria. This tropical strain was first isolated in 1923 by the French scientist Henri Boulard, from lychee and mangosteen fruits whose peels were traditionally used in Southeast Asia; it has borne his name ever since.
A close relative of Saccharomyces cerevisiae, the baker's and brewer's yeast, Saccharomyces boulardii stands out through well-documented physiological characteristics: an optimal growth temperature of around 37°C — that of the human body — and a marked tolerance to gastric acidity. These particularities have made it one of the most studied yeasts in research devoted to the intestinal microbiota.
Each capsule provides 2.7 billion colony-forming units (CFU), in a deliberately streamlined formula: free from inulin, preservatives, coloring and lactose.

As a yeast, it also displays a notable microbiological characteristic: it is not sensitive to antibacterial antibiotics, which target mechanisms specific to bacteria.
