Initially, glucosinolates are present in broccoli, which are then converted into active molecules such as sulforaphane and indole-3-carbinol (I3C). Indole-3-carbinol subsequently forms DIM. This conversion process is catalyzed by the enzyme myrosinase, activated during chewing or secreted by our gut microbiota during digestion. To obtain DIM, a second transformation occurs in the stomach where indole-3-carbinol dimerizes under gastric acidity—that is, two I3C molecules bind together to form one DIM molecule.
